Coconut Fragrant Portuguese Chicken

Serves 2
- 2 Drumsticks
- 500g Pumpkin
- 120g Carrot
- 1 Capsicum
- ½ of an Onion
- 3 Slices of Ginger
- 4pcs Garlic
- 30cc Salad Oil Dressing
To make the Marinade:
- 5g Sea Salt
- 5g Ground Pepper
- 10g Sugar
- 15g Soy Sauce
To make the Seasoning:
- A. 45g Curry Powder; 250g Chicken Stock; 5g Salt
- B. 70cc Coconut Milk
- C. 15g Cheese Powder; 30g Grated Coconut

- Cut the pumpkin, carrot, capsicum and onion to small cubes. Chop the garlic.
- Wash the drumstick and cut into bite size pieces. Add the chicken into the ginger and the marinade prepared in advance. Mix well and leave to marinate for 40 minutes.
- In a Corelle Light 1.4L Square Casserole, add in 250cc water to the marinated chicken drumstick and microwave for 6 minutes.
- Add in pumpkin, carrot to 100cc of water. Place in microwave and cook for 4 minutes. Drain away the water and set aside.
- Mix Seasoning A together, add in onion, garlic and microwave for 4 minutes. Then, add in chicken, assorted vegetables, add in Seasoning B and mix well.
- Lastly, add in Seasoning C and microwave for 8 minutes. Ready to serve at the table with the casserole.
