Kueh Pie Tee

Kueh Pie Tee (case)
- 120gm flour
- 1 egg
- 1 cup of water
- A little salt
- Oil (For frying)
Kueh Pie Tee (filling)
- 3 potatoes
- 2 tsp of butter
- 2 tsp of oil
- 1 onion, chopped
- 300gm of small prawns
- Salt and pepper to taste
- 1 large red chilli, seeded and chopped
- 1 coriander leaves

Kueh Pie Tee (case)
- Mix the egg, water and salt in a PYREX mixing bowl.
- Add the flour, bit by bit.
- Sieve the mixture.
- Set aside for 30mins.
- Heat the oil.
- Soak the mould in the hot oil and fry till golden brown.
- Keep in PYREX Store N See airtight container when cool.
Kueh Pie Tee (filling)
- Boil potatoes till soft. Drain and skin. Mash potatoes with butter. Set aside.
- Shelled the prawns.
- Heat oil in a CORNINGWARE casserole over a medium fire. Stir-fry onions until brown, about 3 mins.
- Fry the prawns. Season with salt and pepper to taste.
- Add the mashed potatoes and mix well.
- Fill kueh pie tee cases with potatoes and prawns filling.
- Garnish with coriander leaves and the finely chopped seeded chilli.
- Serve in CORNINGWARE 700 ml petite pan casserole.
