Kueh Pie Tee

Ingredients
    30 pieces

    Kueh Pie Tee (case)

  • 120gm flour
  • 1 egg
  • 1 cup of water
  • A little salt
  • Oil (For frying)
  • Kueh Pie Tee (filling)

  • 3 potatoes
  • 2 tsp of butter
  • 2 tsp of oil
  • 1 onion, chopped
  • 300gm of small prawns
  • Salt and pepper to taste
  • 1 large red chilli, seeded and chopped
  • 1 coriander leaves
Method
    Kueh Pie Tee (case)

  1. Mix the egg, water and salt in a PYREX mixing bowl.
  2. Add the flour, bit by bit.
  3. Sieve the mixture.
  4. Set aside for 30mins.
  5. Heat the oil.
  6. Soak the mould in the hot oil and fry till golden brown.
  7. Keep in PYREX Store N See airtight container when cool.
  8. Kueh Pie Tee (filling)

  9. Boil potatoes till soft. Drain and skin. Mash potatoes with butter. Set aside.
  10. Shelled the prawns.
  11. Heat oil in a CORNINGWARE casserole over a medium fire. Stir-fry onions until brown, about 3 mins.
  12. Fry the prawns. Season with salt and pepper to taste.
  13. Add the mashed potatoes and mix well.
  14. Fill kueh pie tee cases with potatoes and prawns filling.
  15. Garnish with coriander leaves and the finely chopped seeded chilli.
  16. Serve in CORNINGWARE 700 ml petite pan casserole.
