Tomato Soup with Black Bean

Ingredients
  • 1 medium Yellow onion (finely chopped)
  • 2 cloves Garlic (crushed)
  • ½ cup Tomato dressing
  • 4 cups Water
  • 1 can Black beans (drained)
  • 2 Tomatoes (chopped)
  • 1 medium Green pepper (chopped)
  • ½ tablespoon Black pepper
Method
  1. In the Pyrex Metalware saucepan, boil the water and add onion, garlic and tomato dressing and cook for 5 minutes or until onion become tender. Stir frequently.
  2. Add black beans, tomato and seasonings and mix well. Bring to boil. Reduce heat to medium-low and simmer for 15 minutes.
  3. Remove saucepan from heat and stir in green peppers.
  4. When ready, creatively serve on a Corelle cup with garnishing. Serve hot with breadstick.
