Light Salads
After feasting on lots of Chinese New Year goodies, lunches and dinners, it’s time for your stomach to get something light and healthy! Here are some simple and yummy salads to tantalize your taste buds!
Tuna Salad

Ingredients
  • 1 small can tuna
  • ½ cup finely chopped celery
  • 1/3 cup chopped onion (1 small onion)
  • 1/3 cup sweet cucumber relish
  • 4 tablespoon mayonnaise
  • 1 tablespoon salad cream
  • 1 coarsely chopped hard boiled egg
  • Salt & pepper to taste
  • Dash of fresh lemon juice (opt.)
  • Lettuce to serve
Method
  1. Drain tuna well. Put it in a small bowl and break it apart with a fork.
  2. Blend in the celery, onion and relish.
  3. Spoon in the mayonnaise and salad cream, and mix again. The mixture should now be just right, not liquid and not too stiff.
  4. Add in the chopped egg and season with salt, pepper.
  5. Add in a splash of lemon juice for some extra taste and serve in Corelle® Square Round 23oz Bowl.
bulb If you find the salad alone is not filling enough, cook some macaroni shells and add in while mixing.
